“Brian started “condo-brewing” in 2013 when a friend brought over a kit he got for Christmas. That was all it took, he was hooked. After starting off with classic styles like IPAs, APAs, and Saisons, he found and quickly fell in love with barrel-aged stouts and spontaneous fermented beers. That’s where the experimentation began. He took every opportunity to attend Goose Island BCBS meetups where reps would talk about the process. He would furiously take notes and head back to the lab to experiment.”
